Amy’s Famous Roasted Brussels Sprouts!

Aren’t they pretty I could almost eat them raw 馃槀 !!

My roasted Brussels Sprouts will change your life!

Do you guys have a favorite vegetables? I guess I really don’t but in winter we live on these. Roasted Brussels sprouts are great with steak, chicken, or with fish……just about any meal.

You can doctor them up with whatever you like. You can add balsamic, parmesan, make them decadent with gruyere cheese. Just about anything works with sprouts!

Just some basic items can make them the show stopper of any 馃 meal!

Serving Size:
1 cup
Time:
35-45 minutes
Difficulty:
easy peasy

Ingredients

  • Brussels sprouts
  • pepper
  • minced onion
  • olive oil
  • kosher salt

Directions

  1. Pick the best fresh sprouts you can find. The bigger the better. Cut off the ends and quarter them, depending on how big they are. If they are BIG like mine. I quarter them. Add them to a colander and rinse. Let dry.
  2. Add sprouts to a large 9×13″ glass pan.
  3. Preheat oven to 375 degrees.
  4. Add about 1/4″ to 1/2″ cup of olive oil sprinkled all over the sprouts and toss.
  5. Add pepper, kosher salt, and minced onion and you are set.
  6. Roast the sprouts for about 20 minutes and toss them again.
  7. At this point you can add a little butter if you want to richen them and cook another 20 minutes or until done.
  8. The time will depend on how hot your oven is, how big the sprouts are and how caramelized you want them.

This side is a show stopper and so great. These sprouts are also good day two to heat up at work or add to a salad. If you are adding them to salad and/or gonna enjoy them day two also I would cook them for a shorter time.

Hope you guys enjoy my favorite winter vegetable as much as we do!

Have a great weekend, everyone ~ Amy
